Fat Shack begins offering into-the-late-night ‘fat sandwiches,’ burgers downtown

Bring a big appetite to Fat Shack when it opens today in downtown Sioux Falls.

Sandwiches like the Fat Doobie include an appetizer, entree and side in one meal.

One of the Colorado-based chain’s most popular sandwiches comes on a long roll that’s loaded with chicken fingers, french fries, onion rings and mozzarella sticks — all doused in honey mustard.

The menu for Fat Shack in the former K Restaurant space on the south end of the boardwalk at 8th & Railroad Center features seven other “fat” sandwiches, along with more burgers, wings, boneless chicken fingers, a Philly cheesesteak, deep-fried desserts and shakes.

Hours for the restaurant at 401 E. Eighth St. are 11 a.m. to 1 a.m. Sunday through Thursday and 11 a.m. to 3 a.m. Friday and Saturday.

“Our slogan’s ‘late night, done right,’ so we wanted just that fun atmosphere,” said Tyler Weir, who owns the local franchise with his wife, Makenzie. “People are coming out from the bars on Friday and Saturday, nothing else is open or they’re tired of always going to XYZ because they’re the only spot open, so we wanted to be that fun new spot for them.”

Fat Shack also wants to be a great lunch draw for downtown workers, offering daily deals on burgers and a Monday special on wings, Weir said.

While the Weirs kept one of two old warehouse brick walls unpainted, the other one is now gray. There’s also a Fat Shack-signature red sheet-rocked wall and black booths, tables, chairs and exposed ceiling.

“The bones of this place were fantastic,” Weir said. Fat Shack didn’t have to do much in the kitchen other than bring in some new equipment and add a few electrical outlets.

Customers order at the counter. In the dining area, there’s room for 44 diners, and the patio out back can seat 16.

The restaurant serves Coke products and doesn’t sell beer because of neighboring Remedy Brewing Co.

“Talking with Remedy, we’re both super-excited to see what our business can do for them and vice versa — if we’re going to be bringing in a little bit more of a late-night crowd, what that could possibly do for them.”

The two businesses have adjacent patios, so Fat Shack diners will be able to drink a Remedy beer outside, but they won’t be able to bring one inside the restaurant, Weir said. Once Remedy’s kitchen closes for the night, people will be able to bring Fat Shack food into the brewery to enjoy with a beer.

Remedy’s Oktoberfest celebration is Saturday, so Fat Shack will make room on its end of the patio for the traditional pumpkin bowling activity.

Fat Shack was happy to be accommodating, Weir said, “because, I mean, gosh, the amount of business that they’re going to bring for us on that day is going to be amazing.”
