As guests discover the recently reopened Paramount Studio Cocktails & Food, a new menu is waiting for them.

“As we developed this menu, we really set out to develop a cross between sharable items and classics that might be served at happy hour but also become dinner,” co-owner Tim Meagher said.

Paramount is attached to Minervas at 307 S. Phillips Ave.

“We were looking for flexibility with the menu — something that’s very approachable for anyone to enjoy,” Meagher said.

Early favorites include the Belgian XXL Fries, nearly 2 pounds of fries layered with Parmesan cheese and truffle aioli.

“It’s served similar to how you might get it if you were there visiting,” Meagher said of Belgium. “We haven’t stopped eating that ourselves. It’s delicious, and it takes something that could be mundane, french fries, and makes it exciting to eat and share.”

Partnerships with local ranches are seen throughout the menu, including birria egg rolls, “which are absolutely delicious and have been a huge hit,” he continued.

There also are several “luxury cocktails” that will rotate.

“Sometimes when I go out, I just want to treat myself to something, so we have that for people who enjoy that,” Meagher said.

The menu’s emphasis is on fitting a range of budgets, though.

“I think it’s in our best interest to continue to create experiences without alienating people,” Meagher said.

“We use the tools at our disposal to create high-quality items that are really approachable and not so expensive as other times you might go out to eat.”

Guests at Paramount also can order from the full Minervas menu, including the Market Bar. The Paramount happy hour menu also is available any day at Minervas.
