Egg on a Roll to add second Sioux Falls location

Popular Twin Cities egg sandwich shop Egg on a Roll is planning a second Sioux Falls location.
The restaurant plans to open inside The One2, a new mixed-use building on the south end of downtown along 12th Street between First and Second avenues.
“I’m really excited for the development of downtown Sioux Falls in general. … They’re putting a lot of life into it, and it looks great,” founder Adam Bresina said.
Egg on a Roll specializes in grab-and-go “craft egg sandwiches” made with a souffle-style egg and served with a variety of meats, cheeses, vegetables and sauces.
It plans to open first in south Sioux Falls at The Bridges at 57th in the building with Flyboy Donuts at one end and Rust & Co. at the other.
“We have officially started construction,” Bresina said. “So far, we should be opening late March or early April, and we’ll start the hiring process in March.”
Egg on a Roll is a partnership between Bresina and Sioux Falls business owners Nate Malloy and Rory Kelly. It first opened in the North Loop in Minneapolis in 2023 and has gathered a fast following of loyalists.
The One2 largely is filled with apartments — 175 units from studio through three bedrooms. The first residents moved in late last week.
For Egg on a Roll, “being in the middle of downtown, you’re convenient to north and south downtown,” said Raquel Blount of Lloyd Cos., who brokered the deal. “You’ve got a nice walking area from Phillips Avenue and residents right within the building.”
The lease leaves about 2,500 square feet of retail remaining on the first floor of the building.
“We have a deal in process for the rest of the space, but there’s good interest, and we think it’s a good fit for a variety of uses,” Blount said.
For Egg on a Roll, which hopes to open there before the end of June, the site represents the urban nature of the brand, Bresina said.
“A lot of our success in the North Loop was due to within a four-block radius there’s over 10,000 apartments and condos, and when we saw the One2, we said, ‘This is what downtown Sioux Falls needs — a place where people can grab a sandwich to go and enjoy Phillips Avenue and down by the Falls.'”
He also plans to partner locally on coffee, likely with The Breaks Coffee Roasting Co., which also is on the south end of downtown.
“We’ve talked about partnerships and collaborations in Sioux Falls,” Bresina said, adding to expect an entry in next year’s Downtown Burger Battle.
“I’m really excited to spend more time in Sioux Falls. Everyone has been so warm and welcoming, and it’s a community I just want to be part of.”
