Sign offers new information about Wedge restaurant

We know a little more about the restaurant opening at 69th Street and Western Avenue thanks to a sign posted in a window.
Daily Clean Food & Drink will be located at The Wedge, where the owners listed information about what’s to come.
“Healthy food is not a footnote on our menu. It is our menu because food matters to us,” the sign reads. “We prepare our food and drinks fresh using local and organic ingredients whenever possible. We believe what goes into our food and where it comes from matters to the environment, our community and to your health.”
The owners, whose names have not been announced, aren’t ready to talk more publicly about their concept, according to Richard Thomason of Nelson Commercial Real Estate, who is helping market The Wedge.
The sign mentions the words vegetarian, vegan, gluten-free, keto, paleo, low carb, low sugar, low calorie, dairy-free, grain-free, nut-free, local, organic, performance enhancing and foodie.
“Fad diets or buzzwords? We know better,” it reads. “These are dietary choices that individuals make to achieve and maintain optimal health. We believe making a lifestyle choice to eat foods that are right for you, daily, is a healthy diet. Our menu has options for you.”
The sign mentions serving diners for breakfast, lunch “and beyond.”
A building permit for finishing the space was taken out in early July.
The Wedge recently opened its second business, a boutique fitness center called Define.
