Return of Tre Lounge delayed to next year

Blame the supply chain for holding up the return of Tre Lounge to Sioux Falls.

New owners are planning to bring back the bar and restaurant to 601 W. 33rd St. It closed in early 2017 when the former owners retired.

But first, they’re waiting on furniture and equipment.

“I don’t want to give a timeline because everything is so far behind. Supplies and everything are just insane to get,” new owner Michael Hillman said.

Hillman and his family, longtime owners of the Roll’n Pin Cafe & Grille + Catering, also were loyal customers of Tre under the previous ownership.

They have the outside of the building painted, and landscaping is underway.

Work to the parking lot is done.

So while waiting on the inside, they decided to move ahead with adding on a catering delivery entrance at the back of the building and an additional area for garbage.

“And honestly, we do a ton of catering,” Hillman said, adding they had 150 weddings this summer and holidays are busy too. “We were like, we have this time to do improvements in the kitchen and do the add-on, all things we were going to later, and we’re just doing now.”

He has a menu sketched out for Tre but not yet finalized. It will be focused on sharable dishes and appetizers, such as charcuterie options and bruschetta, but there also will be entrees, including steak. The plan is to serve lunch and dinner.

Hillman stressed the new owners are “100 percent” going to move ahead with the restaurant at some point next year. “Without a doubt,” he said.

“We’re going to do this right. Obviously, we want to open. We want to do it right and do it justice that it deserves.”
