When Marcella Salas decided to expand her small-batch salsa company and food truck into a full-service restaurant, she spent time with the team at Vanguard Hospitality learning from the local restaurant group.

Salas opened BibiSol earlier this year with her mother in The Carpenter in downtown Sioux Falls at 219 S. Phillips Ave.

The restaurant specializes in handmade tortillas to create tamales, tacos, sopes and more using a traditional nixtamal technique and leveraging strong relationships with local producers.

Now that BibiSol is open and thriving, Vanguard Hospitality chief operating officer and local producer advocate Tim Meagher went behind the scenes with Salas for a closer look at her approach to local restaurant ownership.
