A new coffee shop is under construction at The Steel District in downtown Sioux Falls.

Brioux Falls — pronounced like “Sioux Falls” — is located inside the office tower that opened late last year, just off the skyway connecting the parking garage with the building.

It’s owned by Kim and Sean Glover and Kim’s sister, Jennifer Curnell, who wanted to own a business and determined their shared interests and backgrounds would support a coffee shop, Kim Glover said.

Kim’s background is in human resources, while Jennifer is a culinary school graduate. Sean is a software engineer who helped build the coffee shop’s website.

“So we all piece together,” Glover said, adding the hope is to have multiple locations.

For the first one — after ruling out a stand-alone building — they discovered The Steel District, “and we said, ‘Whoa, this is cool.’ We were so impressed, and we just felt like how cool would it be to get in a spot like that, that’s really up-and-coming,” Glover said.

“We’re so excited to be part of that cool project.”

Brioux Falls will operate out of about a 500-square-foot space, with at least one table for seating and potentially a couple more.

“Whenever anyone is coming out of the office or into the parking garage, they’re going to go right past us. Or going to the apartments or the gym, they’re going to go right past us,” Glover said.

For beans, the coffee shop is using an artisan roaster called Driven based in the Twin Cities.

“We wanted something unique and that not everyone is going to find at every coffee shop in town,” Glover said. “They’re a pretty small roaster, and we like that small business fits with our vibe too. They fresh-roast all their coffee, they are really hands-on, and they have delicious coffee.”

Milk and yogurt will be sourced locally through Prairie Farms.

In addition to coffee, tea and energy drinks, the menu to start will offer breakfast, lunch and snack options, including savory breakfast items, pastries, oatmeal and yogurt, plus soups and charcuterie snack trays.

“And, of course, we’ll have opportunities to grow and change,” Glover said.

The hope is to open in April.
