Mexican restaurant opens Friday on Phillips Avenue

After several test runs with faithful followers, including one tonight, BibiSol opens Friday in downtown Sioux Falls.

The modern Mexican restaurant at 219 S. Phillips Ave. features farm-to-table ingredients and an indigenous technique for processing dried corn into masa to make tortillas, empanadas and other items on the menu.

Those nixtamal features include a tostada, empanada, sope and taco. For each entree, diners have a choice of carnitas, barbacoa beef, pollo in guajillio salsa and carrot tinga.

Seafood options include ceviche with shrimp and rock fish; gobernador, which is shrimp sauteed in bell pepper, onion and spices, finished with seared cotija cheese; and aguachile, which is shrimp cured in lime juice with a spicy ash salsa, cucumber, red onion and cracked black pepper.

Botanas, or appetizers, range from an elote dip with totopos, or chips, to taquitos with potato and cheese.

Sunday brunch offerings include options such as chilaquiles, migas, breakfast tacos and a churro waffle.

BibiSol is the creation of Marcella Salas and her mother, Patricia Burbine, who started Salas Salsas in 2020, and Salas’ fiance, Chris Nelson.

The full-service restaurant offers seating for about 30 diners at tables, banquettes and the bar.

Patio seating along Phillips Avenue is available, and a couple of tables will be set up in the lobby of the the Carpenter Building, which also includes EightyOne Arcade Bar, other businesses and apartments.

Beverage offerings include Mexican and local beers, micheladas, wine, wine-based cocktails and agua frescas.

The restaurant also will offer a grab-and-go section where customers can buy salsas, tamales and other food.

Salas Salsas will continue to operate its food truck at the Falls Park Farmers Market and sell products at the Brandon Farmers Market and through grocery stores.

Hours for BibiSol are 10:30 a.m. to 8 p.m. Tuesday through Saturday and 10 a.m. to 3 p.m. Sunday for brunch.
