Look’s releases preview of new food marketplace

Look’s Market is on schedule and offering a first look at what its new, larger location will be like in the former Callaway’s.

Its renderings show how the building will be configured into multiple spaces, including a butcher shop, full-service bakery, coffee and ice cream bar, deli, artisan cheese and charcuterie.

“Construction is progressing nicely still,” co-owner Nick Heineman said. “We haven’t had any major hiccups.”

The plan is still to open in late September or early October.

The octagonal space, which used to be the more formal dining room, will be dedicated partly to full-service dining and partly to community dining, Heineman said.

“On the community side, guests are encouraged to order from any of the menus throughout the hall and sit in a relaxed neighborhood atmosphere.”

Look’s is using 17,000 square feet of the building, including the former restaurant and pub space. The event space is still available for lease.

“All of the different areas of the business will be operated by our people, including the restaurant,” Heineman said. “The restaurant is a live-fire concept, open-kitchen concept.  Throughout the entire space, our guests will be able to see the action of every department, including all three kitchens – the butcher shop kitchen, artisanal cheese kitchen and the live-fire kitchen.”

The layout is designed for different guest experiences, with sit-up counters at each department.

There also will be an exhibition kitchen used for employee training, community training, classes and small parties.

Look’s plans to hire up to 50 people in the coming months.

A name is still being finalized, but “the Look’s brand will have a prominent role,” Heineman said.
