Geo’s food truck owner takes over bar’s kitchen

The owner of a food truck known for its old-school cheeseburgers and lobster rolls has taken over the kitchen of The Gaslight Lounge.
Geo’s Hamburger Shopp is the most recent occupant of the tiny kitchen that’s tucked in the back of the bar at 2206 W. 12th St.

Owner George Hendrickson started his food truck in the summer of 2024, building a following in Okoboji, Iowa, for his Connecticut-style lobster roll and tank-fried burgers. When the tourist season ended and the summertime residents returned home, the downtown Sioux Falls resident set up the trailer at the 8th & Railroad Center, serving food until winter arrived.

Last summer, the food truck stayed here while Hendrickson operated a carryout location in Okoboji. The food truck operated sporadically until he returned in the fall.

Now, Hendrickson is looking forward to building a year-round business here.
Geo’s is starting out with hours of 4:30 p.m. to close Wednesday and Thursday, and 11 a.m. to 2 p.m. and 4:30 p.m.to close Friday and Saturday. He hopes to expand that lunch service to the other days.

Families are welcome to eat inside the bar until about 8 p.m., Hendrickson said.
The tank fryer is still on the food truck, which likely will be used only for “guest appearances,” Hendrickson said, so he has switched to griddling his burgers. The quarter-pound patties are a premium blend of chuck, brisket and short rib, he said.

Everything on the menu that’s fried is done in beef tallow. The fries are pure potato with no coating, and the onion rings are lightly battered.

The menu includes all-beef Hebrew National hot dogs, smoked brisket sausages, tavern dogs and occasional Philly cheesesteaks made with shaved prime rib.

The signature lobster rolls should be on the menu in the first week of June, Hendrickson said. They’re 5 ounces of steamed fresh lobster — knuckle and claw meat — in beurre monte, which is an emulsified butter sauce.

They’ll likely be available on Fridays, with any remaining lobster served on Saturdays, he said.
