Food truck returns with eye-catching trolley

Curbside Delights makes its return to the food truck scene this weekend in an eye-catching trolley.

Rich Stevenson, who has been in and out of the food truck business in Sioux Falls since 2015, found the converted 26-foot-long trolley in Kansas and has spent the past few months getting it ready.

“I just wanted to get back into it,” he said of having a food truck. “I enjoy being with people and serving them.”

Curbside Delights’ first outing will be from 10 a.m. to 3 p.m. Sunday for lacrosse games at the Sanford Sports Complex.

Stevenson said he likes to offer a variety of food on his menu.

“My menu isn’t themed like a lot of other trucks,” he said. “I can change it depending on the event.”

Customer favorites over the years include his smoked pulled pork and smoked prime rib sandwiches, lamb chislic, pickle fries and a taco in a bowl.

“Everybody likes that,” he said of the taco, “so I keep that on the truck pretty much all the time.”

Stevenson got his start in 2015 with Silver Spoon Mobile Bistro. When he sold that truck and the name with it, he bought a trailer and dubbed it Curbside Delights. He kept that one until 2018 and then scaled back to working the fall softball league at Dunham Park out of a tent.

For the past couple of years, he also has worked a night shift monitoring wind towers remotely to make sure they’re running.

Now, he’s looking forward to getting in his new trolley and being back on the road.

He’ll be at Levitt at the Falls concerts 11 times this season and has booked several small-town festivals. He’s also looking for public places to set up for lunch and is available for private events.
