Coffea Roasterie to open at Hotel Phillips

Coffea Roasterie is expanding downtown with a coffee shop inside the new Hotel Phillips.

The 90-room boutique hotel is opening later this spring in the historic former Great Western Bank building at 100 N. Phillips Ave.

Coffea will operate a coffee shop in the lobby.

“We’ve watched their success and growth in Sioux Falls, and when we had an opportunity for a coffee vendor in the hotel, it was just a natural choice to reach out to them,” said Tom Morris, the hotel’s director of development.

“It’s a perfect fit for our upscale boutique hotel, knowing they have the product and service that’s been successful in Sioux Falls, so we can have a unique experience for our guests that they can only receive here in Sioux Falls.”

It will be the fourth location for Coffea, which will keep its other downtown store at 10th Street and Phillips Avenue.

“The space is absolutely gorgeous,” CEO Bryan Kegley said. “Coffee is so much fun because coffee belongs almost everywhere. Over the years, we’ve had opportunities to do coffee in different kinds of environments, but there’s been nothing like this before.”

Coffea loves the 1918 building, he said.

“To take something that old and be able to see it revitalized and repurposed into something this awesome and do coffee there is really exciting,” he said.

The design will evoke a classic bank-teller theme and have minimally exposed brewing equipment.

There will be a coffee bar with some seating, but guests will be able to sip coffee throughout the lobby at bistro tables, soft seating and on the mezzanine level.

“It’s the feeling of a really old bank being converted into a place to congregate and have coffee,” Kegley said.

The menu will be similar to other locations, with Coffea’s classic beverages plus seasonal drinks and some specialized pastries and breakfast options for the hotel.

Coffea also will provide coffee within the hotel’s guest rooms.

“It allows us to straddle the two worlds we live in,” Kegley said. “We’re very local. We started in Sioux Falls, and we love it and it’s home, but coffee itself is global. You can’t be a coffee company and not be related to the rest of the world. And our growing wholesale and online business brings us outside Sioux Falls, so to do something that allows us to be here and step into people’s worlds as they visit Sioux Falls is really fun.”
