‘Not your traditional fried egg’ restaurant expanding to Sioux Falls

A new fast-casual restaurant specializing in egg sandwiches that has gotten a lot of buzz in the Twin Cities is coming to Sioux Falls.

Egg on a Roll plans to open next year at The Bridges at 57th in the building with Flyboy Donuts at one end and Rust & Co. at the other.

The restaurant will offer customers “a craft egg sandwich, not just a breakfast sandwich,” according to Minneapolis-based owner and founder Adam Bresina. 

The restaurant first opened in June 2023 in the North Loop neighborhood and plans to expand in the new year. 

“We’re expanding to Sioux Falls because of the blooming culinary scene,” Bresina said.

Egg on a Roll is a partnership between Bresina and Sioux Falls business owners Nate Malloy and Rory Kelly.

“The people of Sioux Falls have been some of the most hospitable folks I’ve met,” Bresina said. “It’s very exciting to bring Egg on a Roll to a new community and intriguing to see what kind of partnerships we’ll drum up.”

Egg on a Roll looks to offer a quick, healthy meal beyond breakfast, he said.

“This is not your traditional fried egg,” Bresina explained. “It’s a signature egg souffle-style preparation that is paired with a variety of different sauces, toppings and bun types.”

Its nontraditional culinary experience will be unique to Sioux Falls, he added.

“We are a cashless operation, focusing solely on ordering from our in-store kiosk or ordering online through our website for pickup or delivery,” Bresina said. “End of the day, we are just a group of cooks, looking to sling the most delicious egg sammies in town.”

Egg on a Roll plans to open in March 2025. 

In the Twin Cities, the restaurant has earned nearly perfect reviews on Google and enjoyed a lot of social media attention.

“We became a staple in the community within a few short months due to our delicious sandwiches at a great price point,” Bresina said. “I see a lot of the same community feel and energy in Sioux Falls and believe we can provide some value to the community with a quick, delicious egg sammie.”

Bringing the business to Sioux Falls “is going to be so cool,” said Raquel Blount of Lloyd Cos., who represents the tenant. “If you look at their product, they have a defined item, and they do it really, really well. People in Minneapolis line up for this.”

Offices often order dozens the day before and pick them up in the morning, she added, making the south-side location in Sioux Falls favorable “for its proximity to the south office parks and convenience for the residential area,” she said. “It’s right by Flyboy Donuts, plus you have I-229 and the soccer field and all that fun stuff nearby.”
