Scooter’s Coffee will be opening at The Empire Mall.

It’s backfilling the former Caribou Coffee space at the entrance between Sephora and Athleta.

Scooter’s Coffee will offer its full menu of espresso‑based drinks, energy infusions, sparkling sodas, smoothies, teas and breakfast items.

It’s scheduled to open early this fall.

Other projects underway at the mall include Dick’s House of Sport, which is building out the former Sears site; JD Sports, which is expected to open May 1; Gap Factory, opening this summer; and Pacsun, which is returning to the mall this summer.
