New venture to provide shared kitchen space

A new prep kitchen that’s coming for Daily Clean Food & Drink will be available for other food service businesses to use.

“I believe there is a real need for these kitchen spaces on a shared basis,” said Steve Gratzfeld, a co-owner of the restaurant. “I know it’s expensive to set up a kitchen.”

Gratzfeld also owns the retail center, The Wedge on Western, where the restaurant is located. The prep kitchen will fill the final remaining space in The Wedge, which was built in 2017 on Western Avenue south of 69th Street. It will be on the west side of the building in a nonretail space.

The prep kitchen, which doesn’t have a name yet, won’t have a hood system needed for fry cooking, but it will have a baking oven and commercial-size mixers, Gratzfeld said. In addition to equipment and workspaces, the 900-square-foot space will have a walk-in cooler, a freezer and separate pantry rooms where kitchen-share tenants could store ingredients.

Daily Clean Food & Drink will use the space about half the time. “I’d love to have someone come forward to use the kitchen the other half,” Gratzfeld said. If not, he’ll set up a reservation system to use it by the hour.

The restaurant’s recent success is overwhelming its kitchen capacity, he said.

“We’ve really just experienced an uptick in business. It’s pent-up demand from the pandemic, the exposure from ‘Triple D,’ and we’re in our third year of operation.”

Daily Clean Food & Drink was one of six local restaurants featured earlier this year on “Diners, Drive-Ins and Dives” on Food Network. Celebrity chef and host Guy Fieri and crew filmed there a year ago.

Gratzfeld hopes to have the prep kitchen in operation by October.
