New nut butter business to host downtown pop-up

A new business specializing in nut butters will hold a pop-up sale downtown this week.
In a Nutshell 605 is owned by Kristin Catlett and Nyna Nygaard.
It’s launching with three flavors of peanut and almond butter that Catlett describes as “smooth yet crunchy — depending on the flavor mixture along with other ingredients, it can be salty and sweet, chunky or smooth.”
The pop-up will begin at 7 a.m. Wednesday inside Josiah’s Coffeehouse, Cafe & Bakery, 104 W. 12th St. It will run until product sells out.
In a Nutshell 605 is launching with three flavors: Saylor’s S’mores, named in honor of Nygaard’s grandson and inspired by his favorite snack made with honey-roasted peanut butter, marshmallow fluff, graham cracker crunch and mini marshmallows; Henry’s Hankerin, named after Nygaard’s service dog, with a dry-roasted peanut butter, carob and coconut oil; and Rainbow Unicorn, a fruity almond butter blend with strawberry syrup, tutti fruity crunch and tiny unicorns.
The pop-up is “the beginning phase of a bigger vision for a different kind of retail space,” Catlett said. “We will have an online presence with selling ship-to-customer, and as we grow, we plan to open a storefront in which we will have grinders set up along with a self-service bar full of all the candies and goodies you can imagine.”
A website is still in development, and the hope is to also sell jars of the nut butter in other area businesses, including Josiah’s.
