Mexican food truck features giant machete tacos

Two women have expanded from catering for friends and family to cooking for customers at their new food truck.

Alondra Jimenez and Lilia Fernandez are the owners of Las Mexicanas Food Truck, which is based in the Runnings parking lot at 49th Street and Western Avenue.

They have been open since July 19, serving a large menu with the usual Mexican favorites like tacos, burritos, quesadillas and tortas.

They also make items such as gorditas, which are masa cakes stuffed with meat, beans and cheese; sopes, which are masa cakes that serve as a base for toppings; and machetes, which are long corn tortillas that are filled with meat, beans, rice and cheese, folded over to look like a long blade and then grilled.

The machete is one of the early favorites, Jimenez said, noting that they make the corn tortillas and other masa dough items from scratch.

“We wanted to do something different, the most authentic, different than other areas” to stand out, Jimenez said.

Meat choices include birria, asada, chicken, chicharron and picadillo, which is ground beef with potato and carrot. Roasted potatoes and nopales, or cactus, are other options.

The kids menu includes a quesadilla, burrito, chicken strips and milanesas, which are thin cutlets of beef that are fried.

A breakfast menu is served from 10 a.m. to noon Saturday.

Jimenez and her family moved to the U.S. about 10 years ago from Tamaulipas, a Mexican state just south of the tip of Texas.

Fernandez moved to the U.S. from Veracruz, Mexico, 15 years ago. Jimenez said her mother and Fernandez are friends, so that’s how the two met.

They started their business with catering and decided to expand their menu and reach a wider audience with the food truck. They’ll continue to cook for events year-round.

The food truck usually opens by 11:30 a.m. Monday through Friday — 10 a.m. Saturday for breakfast — and serves until 6:30 p.m., Jimenez said.

Customers can eat at tables under a portable canopy for shade.
