New food truck features smashburgers, paninis, empanadas

June 18, 2025

The former executive chef at Grille 26 and his uncle have started a food truck with dreams of someday owning a restaurant.

The Black Sheep made its debut Saturday in the Last Stop CD Shop parking lot at 3509 W. 41st St., said Jorge Garcia, who moved to Sioux Falls from Austin, Texas, two years ago to work at Grille 26. His uncle Bruno Capelbo is part of the adventure.

The menu features smashburgers, paninis and empanadas and likely will have a feature every week.

“I put a little bit of my life into the menu,” Garcia said, noting that part of his family is from Italy. “I poured everything I had into it to chase the opportunity.”

The burgers and paninis come with battered fries, which are Garcia’s favorite style because “they have that extra crunch.”

The kids menu includes an all-beef hot dog, smashburger and chicken tenders, and each meal comes with fries and a drink for $6.

“We try to aim for really affordable prices for people to enjoy good food,” said Garcia, who was born in Uruguay and came to the U.S. when he was young.

The empanadas are $3 each and the burgers and paninis are $12 to $14.

Garcia and Capelbo, who was a chef in the South American country before moving here and also worked at Grille 26, plan to be out seven days a week for lunch and dinner.

“We want people to know who we are and work hard for it,” Garcia said. In addition to Last Stop, other pop-ups will be in the parking lot of Roy’zzz at 2520 S. Louise Ave. and other spots where they’re invited. “We also hope to be downtown on the weekend,” he said.

Garcia said The Black Sheep name comes his personality. “I’ve always been an outsider and wanted to do my own thing since I was young,” he said. “I went and chased my career.”

In addition to Texas and Sioux Falls, he has worked in New Orleans, Chicago and Florida over the past 10 years, but he’s ready to “stay here and plant my roots.”

He’s happy to be working with his uncle, he said. “We’d been apart for almost 20 years, and we finally met again, and it has been a ride. … We want to risk it and see how far life can take us.”

The two men aren’t afraid of hard work, they said. “We are up and 7 a.m. and done at 11 p.m.,” Garcia said. “It’s a passion of ours, so we don’t feel like we are working. We are building something and that makes us happier.”

The Black Sheep can be booked for public and private events, including catering.
