Cafe, catering business opens at Joe Foss Field

A new restaurant owner who ultimately hopes to open a cafe in Lennox has decided to start out in Sioux Falls.
Taylor Massey thought she had a space for Thyme Cafe & Catering in the community where she graduated high school, but when it didn’t work out, she focused on a new plan.
It led her to connect with Lance White of Chef Lance’s on Phillips, who told her his former space was available at Signature Flight Support at Joe Foss Field.
“It will be a better catering location while I work on getting another space in Lennox, which is going to take a little more time because of potentially building a kitchen,” Massey said. “So now, it’s just a big, nice kitchen, and I can do a cafe for the employees here and still do what I’ve been doing with a lot more flexibility.”
After going to culinary school and working in a corporate food setting, Massey decided she wanted to start something of her own. The catering side of the business already has been operational, with family-style take-and-bake meals and a three-course meal for New Year’s Eve.
The cafe opens Friday and will serve from 8 a.m. to 2 p.m. weekdays.
The menu includes chicken and waffles, made with Massey’s popular bubble waffle with a honeycomb-like texture that gives it “a different variety to the standard waffle and makes it look fun and exciting,” she said.
The menu also includes two burgers, breakfast tacos, pastries, a grilled cheese sandwich, soup and Thyme Pasta, made with Italian sauce and cream sauce over cavatappi noodles with fresh thyme.
Massey will continue to offer family meals, with changing menus, as “there’s been a lot of positive feedback,” she said. Customers can pick them up at her new location, 3501 N. Aviation Ave., or at D&D Small Engine Repair in Lennox. Follow her here for details.
