New food truck features ‘four nations’ of cooking

A new addition to the food truck scene in Sioux Falls draws on the owner’s heritage and her love for cooking different types of cuisine.
Four Nations Food Truck features Native American, Mexican, Asian and American food, owner Maxi Southard said.

“It will be a rotating menu,” said Southard, a member of the Cheyenne River Tribe. “Each one will be something different.”
Offerings include dishes like Indian tacos, buffalo burgers, wojapi, breakfast burritos, tacos, tamales, egg rolls, stir-frys, barbecue, burgers, hot dogs and chili cheese fries.

Eventually, she might do a buffalo stew with wild rice and use elk meat once she makes connections with wild game suppliers. Southard envisions making comfort foods like tater tot hotdish, “something simple that you don’t necessarily get from a food truck.”
The truck has an espresso machine and also serves energy drinks, refreshers, dirty sodas and mocktails.

Southard grew up in Rapid City, where she learned to cook Native American food from her mom, including the family’s fry bread, she said. She picked up recipes for dishes like tamales, posole and ceviche on visits to Mexico and taught herself how to cook Asian dishes.
Southard has lived in Sioux Falls for 20 years and works part-time as a medical assistant at Avera. Owning a restaurant has been in the back of her mind since college, she said. Now, she has reached a point in life where her kids are in college or headed there and she has more time to do something for herself, she said.

Her long-term goal is to open a small coffee shop that would serve breakfast and lunch.
For now, she plans to be out a few times every week with the food truck, focusing on breakfast and lunch pop-ups at businesses where Four Nations has been invited and then events on the weekends, including Juneteenth and Fourth of July celebrations in Sioux Falls. It’s also available for private events.
“We’re slowly getting our name out there,” Southard said.
