Wine Time on Main starts hiring, building big wine list

The new downtown wine bar opening this fall at Washington Square will offer a wine list like no other in town.

Wine Time on Main plans to have about 700 bottles on hand with 150 varieties. And, thanks to a device called a Coravin, you’ll be able to get a glass of anything.

A Coravin is used to pour wine by the glass without pulling the cork, eliminating oxidation.

“We won’t have a bottle in there you can’t get a glass of, which is going to make us extremely unique,” owner Bob Novak said.

Construction is making progress inside the space, and the hope is to open sometime in October.

“It’s coming along well. We’re right on track. There shouldn’t be any delays,” Novak said. “It’s a small place, but we’re finishing it very nicely. We look forward to giving you a preview in the coming weeks.”

Wine Time will need a bar staff of about five people and will be open seven days a week. For information on hiring, visit winetimeonmain.com.

One key hire has already been made.

Kelsie Holmberg will be the manager. She’s a Gregory native with 15 years of experience in the bar and restaurant industry. She has spent the past decade working in Sioux Falls.

“I really like the downtown scene, and I’ve always had an interest in working in or owning a bar,” she said. “I love downtown and look forward to adding to it. I think we’ll bring something a little bit different downtown.”

As for what her customers can expect from Wine Time, “it’s going to be an experience,” Holmberg said.

“When people walk in the door, it will feel like a unique experience. We’re going to have a very different selection, and we can’t wait for people to start enjoying it.”
