Will’s Training Table to reopen next week with new additions

Will’s Training Table will reopen Nov. 19 at the Sanford Sports Complex, with one phase of renovation done and an expansion coming next.

The newly opened area will include the former bar, which has enhanced graphics and TVs.

It leads to an enclosed “tailgate room” surrounded by garage doors.

“It’s going to be an area where people can come, mainly event-driven, but we really want to draw crowds in from around town to check us out,” said Julie Coleman, who began as the Sanford Sports Complex food and beverage director in September after 38 years as director of catering for Ramkota Cos.

Coleman also will oversee food and beverage at GreatShots, the new golf entertainment facility under construction at the Sanford Sports Complex.

“It was just a fun new horizon, she said. “It’s not another restaurant. It’s a whole new concept that’s fun and different, and with GreatShots coming, it was totally enticing.”

One of the biggest improvements at Will’s is an enlarged kitchen, which supports a new menu at the restaurant and the additional space that’s coming.

It includes a broad selection of appetizers, including the Hearty Man’s Sampler, a sharable appetizer with candied bacon, fried Brussels sprouts, pork “burnt ends,” pretzel bites, char buffed wings, pepperoni chips, Korean-style St. Louis ribs and provolone cheese dip, and the Veggie Platter Twist, with fresh seasonal cut vegetables, fried Brussels sprouts, cauliflower, creamy spinach artichoke dip and roasted red pepper hummus with pita chips.

There also are several salads, sandwiches, paninis, wraps, never-frozen burgers, tacos, bowls, pizza, flatbreads and some entrees, including beef medallions.

“It’s quite expansive,” Coleman said, adding that the goal was to have something for everyone from families to those on Sanford’s Profile plan to those looking for classic bar fare while watching a game.

The next phase of construction at Will’s is scheduled to be done in February, and then a new name will be announced along with some potential menu changes.

“That will have the main entrance, a lodge area, a rooftop bar and what we call the signing room or additional event space,” Coleman said.

“Off the lodge will be another patio area. There will be comfortable seating on that side, little lounge pits, and the sports feel will be throughout.”

Hours when it opens Nov. 19 will be 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to midnight Friday and Saturday.
