New food truck featuring breakfast coming to downtown

Cinnamon rolls, biscuits-and-gravy egg bakes and breakfast pizzas are coming to a busy downtown intersection.

Kane’s Baked Goods & Cafe will operate from a trailer in a parking lot on 10th Street east of Minnesota Avenue.

Owner Chelsea Alexander, who started with an in-home bakery, said she’ll start with a breakfast menu and her baked goods and expand to lunch.

Other items on that menu will include a breakfast sandwich with a twist: she’ll put egg, bacon and cheese between slices of a cinnamon roll. Her loaded breakfast potatoes feature homemade gravy, bacon, cheese, an over-easy egg and pico de gallo. The baked goods are made from scratch, including the dough for the pizza. She has been doing a take-and-bake version of that for her online customers.

Her passion for baking started as a child.

“I grew up with my mom doing all the holiday baking,” she said. Alexander went to culinary school and knew that she wanted to have her own business.

She started Kane’s – that’s her son’s name – a year ago, taking orders online and selling at vendor fairs and farmers markets. Alexander bought an old concessions trailer and rebuilt the interior over the winter.

It will make its debut this weekend, opening at 8 a.m. both mornings. The parking lot, which is between the CenturyLink building and the new dental office on the corner, has plenty of room for cars and will be set up with a few tables that customers can use, Alexander said. Customers can enter from 10th Street or through the alley off of Ninth Street.

For regular hours, she’s hoping to be open by 7 a.m. on weekdays and serve until noon. Weekend hours will be 8 to 11 a.m.

“Once we add lunch, then I want to extend my hours to about 2.”

That menu will include salads and wraps, “nice fresh options using local produce,” Alexander said.

She’s committed to helping other local owners grow their small businesses, she said. Kane’s will feature Rainy Day Coffee Co. beans from Shania Rozeboom, including a cold brew that Alexander will make in addition to a hot brew. She’ll also serve a lavender Earl Gray tea lemonade with tea from Monaya Hustoft, whom Alexander met at a Backyardigans event last summer. She’ll also have fresh-squeezed orange juice.

Her efforts to give back to the community will include charitable donations. When customers tip the help, Alexander will make a donation of a matching amount to a different cause every month.
