Intoxibakes doubles in size

May 28, 2021

A downtown bakery has doubled in size with its move into another space in the Jones421 Building on North Phillips Avenue.

Intoxibakes, which specializes in cupcakes and other sweets infused with alcohol, took over the first-floor marketplace spot for OG Greens, which closed in March.

“Right now, we have the same amount of equipment, but we’ve definitely got room to grow,” said Shannon Johnson, who owns the business with mother-in-law Holly Jorgenson and sister-in-law Josie Layton.

“The hope is that Josie and myself will actually be here full time, so (we have) two islands. We both have our own workspace, and we’re not elbow-to-elbow while we’re baking.”

The women also are looking for a second display case, “so we can expand both the boozy side and nonboozy side, and then everything’s a little bit more separate, so that there’s not so much confusion” for customers, Johnson said. “Is this a boozy product? Is it a nonboozy product? There will be two separate cases, so we can get it all sorted out.”

Since starting in 2017 as a delivery-based cupcake business, Intoxibakes has been expanding its product line, including a growing business for custom-ordered cakes for celebrations such as birthdays, graduations, bachelorette parties and weddings.

Offerings are expected to expand with the new space.

Hours for Intoxibakes at 421 N. Phillips Ave. are 7 a.m. to 7 p.m. Tuesday and Wednesday, 7 a.m. to 8 p.m. Thursday, 7 a.m. to 9 p.m. Friday and 8 a.m. to 7 p.m. Saturday.
