Fat Kid Filly’s expands into bar’s kitchen

The latest expansion for Fat Kid Filly’s opens Saturday in Valley Springs.
The business, which started last year as a food truck, will operate out of the kitchen at On the Rocks.
Owner Cody Sauers plans to start with dinner service five or six nights a week and expand into breakfast and lunch next year.
“We’re really excited,” he said. “There’s nothing like it in the area.”
The menu will be similar to FatKid Saloon, which he and his wife, Amber opened in September in Salem.
Diners will be able to find steak, chicken and pork “Filly” sandwiches – his version of a Philly cheesesteak – along with appetizers, wings, burgers and kids menu items.
When Fat Kid isn’t open, the bar will continue to sell Heggies Pizza.
Sauers has hired an on-site manager who has worked with Fat Kid Filly’s before, he said.
“He’s very familiar with all the recipes, and all the meat will be smoked there on-site. … It’s a real hardwood smoker just like we use in Salem.”
On the Rocks is having its grand opening Saturday. It’s the second location for owners Robert Pralguske and his son, Jonathon, who also own On the Rocks in Harrisburg.
The Valley Springs location also has a convenience store and video lottery casino, which opened earlier this fall. The big bar, which can seat about 150 people, started serving on Halloween night and has been hosting live music on the weekends.
Redemption Road will headline the grand opening party, with Lexi McGree kicking off the show at 6 p.m. A party bus will shuttle people from the Harrisburg bar to Valley Springs throughout the night, Pralguske said.
