All American Summer tasting menus and the chance to dine with farmers featured on it await at Harvester Kitchen by Bryan

The downtown restaurant at 196 E. Sixth St. is hosting Sarah and Ryan VanDerVliet, the proud owners of VDV Dutch Acres Family Farm in Humboldt, for a Farmer in Residence dinner Aug. 1.

“We love that they have their entire family in the farming process, and we appreciate that they are flexible and open to listening and accommodating our feedback on what works best for Harvester Kitchen’s culinary needs,” owner Bryan Moscatello said.

“We also appreciate their commitment to quality and sustainable practices, ensuring we serve our customers with the best ingredients possible.”

Harvester Kitchen’s current All American Summer chef’s tasting menu features a lamb burger on a poppy seed bun from VDV Dutch Acres Family Farm. It’s served with truffle fries and parmesan espuma.

“The quality of VDV Dutch Acres lamb is fantastic,” Moscatello said. “Our guests frequently comment on the flavor, the moistness, the tenderness and the appropriate marbling – even the usual tougher cuts are more tender.”

At the Aug. 1 dinner, guests will experience all preparations of lamb, he said.

“Guests can expect an interactive dining experience at the Farmer in Residence dinner,” Moscatello said.

“The event starts with a social hour featuring canapes and drinks, providing a chance to chat with the farmers. During the meal, we will present and discuss the dishes, creating a deeper connection between diners and the farm-to-table journey. It’s a unique and memorable culinary adventure that celebrates sustainable farming practices.”

The VanDerVliet family participated in a similar event last year at Harvester Kitchen.

“The feedback we’ve received for these dinners, specifically the ones featuring VDV Dutch Acres, has been overwhelmingly positive,” Moscatello said. “Guests have expressed appreciation for the opportunity to engage with both our team and the local farmers.”

Harvester Kitchen will be featuring its All American Summer tasting menus for the next couple of months. Updates will be made Aug. 1 and Sept. 1, so come in soon to try the current menu.

“The All American Summer tasting menus came from the nostalgia of my cherished childhood memories of summertime foods: fried chicken, lobster rolls, pasta and clam sauce, watermelon, tomatoes, pasta salad and more,” Moscatello said.

“The core idea behind the menu is to celebrate classic American flavors reimagined with a modern and sophisticated twist.”

No matter when you dine, “our goal is to offer our patrons a one-of-a-kind dining experience with the excitement of exploring new and inventive creations prioritizing high-quality products and ingredients that elevate the flavors and textures of each dish,” he added.

“We hope the experience of new and different dishes, possibly things they have not tried before, will offer a fun and memorable evening.”

Here’s what a guest had to say recently:

“A unique experience with stellar ingredients meticulously prepared and presented, accompanied by informative — and fun — discussions with the farmer and chef. The highlight is, of course, Bryan’s interpretation of the ingredients in the innovative dishes are always surprising — and delicious.” — Open Table diner review.
