Soul Train delivers flavor on trolley wheels

After 30 years of working in the restaurant industry, Barry “Chef B” Selland has started his own business.

His restaurant, Soul Train, is on wheels, an eye-catching 26-foot long trolley.

The menu, which will change frequently, will “elevate some crazy food,” Selland said.

He’s planning to do ribs, other smoked meats, smash burgers, different kinds of grilled cheese, mac-and-cheese and collard greens.

“I’m bringing a different style of food to Sioux Falls,” said Selland, who grew up in Garretson and has been a dishwasher, server, bartender and cook. “I’ve done it all.” His food truck experience includes working one year  on The Big Orange Food Truck.

“I just started teaching myself through the years how to smoke meat. … I did not go to school, just learned on the street of hard knocks. Now, I’m going to take off on my own.”

His opening was last week at the 420 party at Bigs Bar, and smoked brisket found its way onto street tacos. He made smash burgers, poutine and more, including his Bottom Feeder Fries — “everything I’ve got goes on the fries.”

Menu items that become customer favorites will find a permanent home on the menu.

Soul Train is on the schedule for several nights at Food Truck Tuesday at Golf Addiction starting May 16, and Selland said he plans to be downtown at places such as Bin 201 and Common Sense.

He plans to have a Facebook page set up soon so customers can find where Soul Train will be. It’s available for public and private events.
