Boutique cocktail, food lounge planned for Hotel Phillips

The Treasury, a new boutique cocktail bar and food lounge, plans to open this summer inside Hotel Phillips.

Renderings show a classy, bold space unlike any in Sioux Falls, starting with a dramatic entry.

Visitors can come into The Treasury through the bank vault that has been preserved in the lobby of the century-old building at 100 N. Phillips Ave.

Inside, they will discover a design that blends the historic nature of the space with a modern food and beverage experience.

“We could tell early on their vision was right in line with ours,” said Tom Morris, the hotel’s director of development.

“A key characteristic of a boutique hotel is to offer unique local experiences, and the operators of The Treasury have been successful at providing a great overall experience for their patrons in downtown Sioux Falls.”

Brian White of the Carpenter Bar and his team will run the new venture.

The Treasury will seat between 60 and 70 people and cater to a downtown crowd in addition to the hotel’s guests.

The decor is a mix of vintage, modern and deco. It will feel design-forward and comfortable, White said.

Materials include the original terrazzo tile floor, white and black marble, walnut and bird’s eye maple. Colors are subtle green – “the color of money” – and there is lots of lamp lighting with one statement fixture.

The Treasury will serve bar bites and a curated menu of entrees that general manager Michael Mohr called “chef-driven, new-American fare that’s seasonally changing and sources local ingredients wherever possible.”

There also will be a plated brunch menu served on weekends.

“We want to be a regional influencer in the boutique cocktail and food culture,” Mohr said.

The cocktails “will be creatively classic with exceptional ingredients and always changing,” he said.

The Treasury plans to open in early July — before the hotel is renting out rooms — and will have its own outside entrance as well as accessibility through the hotel’s vault.

“With their vision, history and enthusiasm, I’m confident they will raise the bar and provide the ultimate experience for our hotel guests and local patrons,” Morris said. “We couldn’t be happier with the operators.”

The Treasury is the second local operator to sign on with Hotel Phillips. Coffea Roasterie will run a coffee shop in the lobby.
