BB’s reopens in new space with expanding menu

A longtime pub is back with a new home in northwest Sioux Falls and a focus on providing an elevated experience.

BB’s Pub N Grill is now BB’s, said Ethan Harvey, a grandson of owner Dave Birger.

It’s in the new Birger’s by U building along Marion Road south of 60th Street North that Birger designed for BB’s and Uncle Doug’s Liquor, his second liquor store in Sioux Falls that opened just before the new year. BB’s started with a soft opening Wednesday and will move to full hours Friday, which includes breakfast.

The menu will expand as the kitchen crew gains experience in the new space, Harvey said.

Diners will find BB’s burgers, chicken sandwiches, wings and broasted chicken. New offerings include pasta dishes like fettucine alfredo and the Southwest Chicken Penne. Steaks will be a big addition to the menu, Harvey said. Half-racks of ribs might be added.

The reopening of BB’s at 5402 W. University Trail will mean some changes for the nearby Credo’s Pub, which Birger opened a year ago as a temporary home to hold BB’s liquor license. Birger was able to buy a second liquor license, so Credo’s will remain open – at least for the next few years, Harvey said. The pub, which is at 5524 W. Success St. in one of the apartment buildings at University Hills Village, has gained its own following.

But now that BB’s is open, Credo’s will no longer serve breakfast or broasted chicken, Harvey said. Burgers, chicken sandwiches, pizzas and everything else will stay on the menu.

A new offering to the traditional breakfast menu at BB’s of pancakes, eggs and bacon will be French toast, Harvey said. With the addition of steaks, there will be dishes like steak and eggs, and country-fried steak.

“We’re also looking into doing waffles. Down the line, we might have chicken and waffles.”

Breakfast will be served beginning at 8 a.m. Monday through Saturday and 9 a.m. Sunday, ending at 11 a.m.

BB’s has room for 210 diners, and there will be seating for 60 on the east-side patio in nicer weather.

“I would definitely say the feel here is kind of a high-end bar,” said Harvey, who serves as the bar manager of BB’s and Credo’s Pub. “We’re working on getting some nicer bourbons and scotches.”

Like the original BB’s Pub, which was at 49th Street and Westport Avenue, BB’s features a large selection of beer. There are 48 tap lines, with one dedicated to a nonalcoholic root beer from Millstream Brewing Co. in Amana, Iowa.

“I’d say probably about half of the tap lines are dedicated to local beers in Sioux Falls,” Harvey said, adding that about a dozen are from other Midwest brewers.

The new space has 26 TVs, two pool tables and three dart boards.

A separate casino area has 10 video lottery machines.

For entertainment, trivia might be added in the future on nights when Credo’s doesn’t offer it. For now, the weekly “beer school” event will stay at Credo’s.

Closing time will be around 10:30 or 11 p.m. Sunday through Wednesday and around midnight Thursday through Saturday, with the kitchen shutting down around 9:30 p.m., Harvey said.

The new opening time for Credo’s will be 11 a.m. daily, and “that definitely will be the first of the two locations to close,” Harvey said. “If it’s slow there, we’ll send them over to BB’s. If people are there, they’ll both stay open later.” Closing time for Credo’s is usually 11 p.m. or midnight during the week, 1 a.m. Friday and 2 a.m. Saturday.

Both businesses are family-friendly until 10 p.m.

BB’s is continuing to hire kitchen staff, Harvey said. “We need more cooks … but I also know everyone is looking for them.”

With that in mind, “we hope people are a little bit patient with us as we get things more readily available. We’ve taken on a menu that we’ve never even attempted before. … We’ll get it together and put out a good product.”
