‘Baja/Costa Rican’ bar to open inside Allure Health

A “Baja/Costa Rican”-inspired bar opens this week inside a broader health-focused building in south Sioux Falls.

Components of Allure Health began opening last year.

Now, the final pieces of the facility at 7000 S. Lyncrest Place are wrapping up.

Thalia Bar is one of them. The grand opening is planned for Saturday, and finishing touches are being completed on the space, which is designed to harken back to the early part of the 20th century, said Jennifer Hair, executive director and chief operating officer of Allure Health.

“We have 40-some plants in that small space, and the floor is porcelain, so we’re giving that old-time feel and and focusing on unique wines and beers.”

There’s a signature red beer along with both domestic and crafts, plus nonalcoholic cocktails.

“The idea of the whole building is to create a destination and experience, and that’s what Thalia plays off well,” Haiar said. “When you come here,  you feel like you’re in Europe and not in Sioux Falls.”

Allure Health includes Storm Clinic, which relocated, expanded and rebranded as Allure last year. The multispecialty independent clinic includes a supporting laboratory. Founder Dr. Jeremy Storm specializes in internal medicine and infectious disease.

The building’s IV club also has a growing customer base, Haiar said. She’s in the processing of franchising the concept.

Allure’s fitness center will complete the facility, with memberships currently on sale.

“You’ll have to be a member to use it, and we’re starting with 100 exclusive members at $99 per month,” Haiar said.

That will include other benefits, including a 17 percent discount at the IV club and Thalia in addition to benefits through the clinic.

At Thalia, hours will be 2 to 9 p.m. Tuesday through Saturday.

“The clientele we’re going for is that professional during the week who can take off work at 3 or 4 p.m. and come have a flight or couple beers and tapas and go home to their families,” Haiar said. “It’s not going to be late night. It’s going to be that local hangout destination place where you can check out for two or three hours, or people can come with a laptop and work. We’ve created little pods for each table, so it feels more intimate.”

Wines will be offered by the glass or flight with a focus on champagne, she added.

The menu being developed by executive chef McKenna Geringer includes seafood sourced with a Hawaiian company and flown in within 48 hours.

“Because we can’t cook in our kitchen, we naturally fell into more of the seafood and sashimi type of menu, along with a traditional tapas menu,” Haiar said.

Dishes include a charcuterie, warm olives and a deviled egg bar.

“We’ll have cheeses nobody else in town has — we’ve done our research — so that should be fun,” Haiar said, adding a selection of crostinis also is being developed.

In nicer weather, “we have a huge patio that we’re going to surround with Aphrodites, so you’re barricaded, and it creates a terrace effect,” she said. “We’ll have a fountain in the spring, so we’ll focus heavily on that patio because it’s east-facing and covered, so you’ll feel like you’re in a French terrace with tons of greenery and plants surrounding it … kind of a grass wall.”
