As downtown salad shop closes, bakery expands

A downtown bakery specializing in sweets infused with alcohol is moving into a larger space in the Jones421 Building.

Intoxibakes, which is also in the first-floor marketplace of the mixed-used building on North Phillips Avenue, is taking over the former OG Greens space.

“We’re knocking out a couple of walls and making that one big space,” said Holly Jorgenson, who started the bakery with her daughter, Josie Layton, and daughter-in-law, Shannon Johnson, in 2017. “We’re hoping to be moved in in the next 30 days or so.”

The trio moved the bakery downtown two years ago, and business grew in the past year in spite of the pandemic, Jorgenson said.

“We definitely outgrew our little space, and we wanted to stay in the Jones building. We really like it there,” she said. “The opportunity came open, so we’re going to jump into the larger space.”

OG Greens, which specialized in health food salads, grain bowls and fresh-squeezed juices, closed recently. Owner Brandon Manning could not be reached for comment.

The remodeling project for Intoxibakes will create a space similar to the current one, Jorgenson said.

“We’re still going to leave it open. People like to watch us decorate and talk to us.”

While Intoxibakes specializes in cupcakes and cakes infused with alcohol, it also makes nonboozy baked goods.

“Our cake business has really taken off with wedding cakes and birthday cakes,” said Jorgenson, who does the bookkeeping and marketing for the business. Johnson and Layton will start baking full time with the expansion, she said.

The new space will have more display cases and eventually more products. “We’d like to get into pies and stuff like that,” she said.

Intoxibakes also will begin shipping its treats.
